Vegan Caramel Corn

Vegan Caramel Corn

10-12 cups popped popcorn
           ***air popped for less calories

Caramel Mixture

1 ½ cups brown sugar
3 Tbsp Earth Balance (or any vegan butter)
½ tsp vanilla extract
¼ cup corn syrup
½ tsp baking soda

Once you have your popped-corn all set, just set it aside in a very large bowl...easier for stirring in the caramel. I didn't have an air popper on hand so I made my popcorn the old-fashioned way with oil over the stove. This isn't the lowest calorie option but it is a delicious option.

Over a small pot on the stove, mix in all your caramel ingredients. Slowly stir using a medium heat until you see the mixture begin to bubble. This will burn quickly and ruin everything so keep stirring and DO NOT walk away. Turn heat down immediately while continually stirring. Constantly stirring is essential to the perfect caramel. Once you notice the caramel mixture become perfectly smooth then it is ready. Simply pour the mixture directly onto your popcorn but don't do it all at once. Pour then stir with a massive spoon. Pour then stir.

Once it is cooled, it will harden and become crunchy but who honestly waits until this is completely cooled?! My family went in like a pack of wolves and it was cleared out. MORE PLEASE.
