Gluten-Free Apple Crisp



Vegan Apple Crisp
serves 8

Filling

8 apples - I like to use 4 Gala, 2 Honey Crisp, 2 Granny Smith
¼ cup brown sugar
1 tsp stevia (cuts down on sugar)
1 Tbsp cornstarch
1 tsp ground cinnamon
½ tsp lemon juice
dash of nutmeg

Topping

2 cups of gluten free oats (preferably quick oats)
¾ cup coconut flour
½ cup almond flour
½ cup brown sugar
¼ cup maple syrup
¾ cup vegan soy free butter (Earth Balance)
½ tsp baking soda

Preheat oven to 350 F.

First, we need to attack the apple. The apples need to be peeled, cored and sliced. I like to slice them rather thin and small but do as you like. Throw the apple slices into a large bowl and add your brown sugar, stevia, cornstarch, cinnamon, lemon juice, and nutmeg. Stir and coat apples evenly. Place your apples into a greased 9x13 baking dish (or similar size)

In a separate bowl, combine oats, coconut flour, almond flour, brown sugar, maple syrup, and baking soda. Mix until well combined then add in your melted vegan butter. I proceed to mix the rest with my hands but I'm a mixing with my hands type of girl so go your own way in the mixing world. You'll want to spread the butter love throughout the mixture making it crumbly. Transfer the mixture on the top of your apples. Bake for 45 minutes to 1 hour.

this was such an amazing recipe! we ended up using coconut oil instead of earth balance. it made quite a large serving but didn't last too long! thank you

Thanks for the suggestion Allison. I will definitely be using coconut oil instead of vegan butter for future recipes...healthier and tastier but there are times when vegan butter works better especially in pastry, crusts and cakes though will experiment more with using coconut oil as much as possible.
