Vanilla Macaroons



With the holidays right around the corner, this will be the perfect recipe for some healthier dessert options. I promise no one will have any idea that these are vegan, grain free, soy free macaroons. They melt in your mouth and definitely will become a family favorite.

Vanilla Macaroons

1 cup shredded coconut
½ cup almond flour
½ cup coconut flour
¼ cup coconut butter
2 Tbsp ground flaxseed
1 Tbsp maca powder
¼ cup agave syrup
¼ cup maple syrup
¼ tsp vanilla extract
¼ tsp sea salt

Preheat oven to 350.

Combine all ingredients in a large bowl. I mix this with my hands. Sometimes coconut butter will not be smooth in cooler weather so I simply mix it the best I can into the batter. Once it is cooking the bits of coconut butter will melt into the rest of the batter. Roll your macaroon batter into small 1- 1 ½ inch balls, place on parchment paper and bake at 350 for about 15 min.
