RAW Chocolate Pudding


After making this with my mom again, I quickly realized that not all coconuts and avocados will yield the same results in this recipe. Depending on the age of your coconut you can have a much thicker meat or watery meat. So, to fix this dilemma...be ready to add a bit more or a bit less of cacao and coconut milk. All other measurements will stay the same. Simply taste and add. Taste and add.
 

Raw Chocolate Pudding
170 calories per serving
Serves 4

1 cup of young coconut meat (takes about 2 coconuts)
½ medium avocado
1/3 cup raw cacao powder
6 soaked dates
½ cup light coconut milk
3 Tbsp raw agave nectar
½ tsp vanilla extract
 
Before putting all the ingredients into the blender, I cut my young coconut meat into small sections. This will make for easier blending. While the ingredients for this recipe probably aren't the absolute easiest to come by, the 'making' is truly simple. All you need to do is toss all the ingredients into a blender and let'er rip. Blend until perfectly smooth.
